Mayonnaise is a thick sauce made by emulsifying a neutral oil with eggs and an acid like lemon juice or vinegar. It is often used as a condiment for food such as salads, sandwiches and french fries.

Many commercially available mayonnaises are made using soybean oil which is high in omega-6 fatty acids that can cause inflammation. Mayonnaise made from olive oil and avocado oil has less of this oil.

Recipe

Freshly made mayonnaise will keep in the refrigerator for about four days.

To make:

  • 1 large egg, room temperature
  • 1.25 cups neutral-tasting oil (such as a light tasting olive oil)
  • 1/2 tsp ground mustard seed
  • 1/2 tsp salt
  • 2 tbsp lemon juice, room temperature

Directions:

  1. Add 1/4 cup oil, the egg, ground mustard seed, and salt in a food processor
  2. Blend thoroughly until well combined and pale yellow in color, about 30 seconds
  3. With the food processor running, slowly add the remaining oil until fully emulsified and thickened, about 60-90 seconds
  4. With the food processor running, add the lemon juice and blend only until it is incorporated, about 5-10 seconds
