Mustard is a condiment made from ground seeds of the mustard plant mixed with water or vinegar. The mustard plant variety and the quantity of vinegar determine the intensity of the mustard flavor.
There are different types of mustards available:[1]
- Yellow mustard
- Includes turmeric which gives it the bright yellow color. A very mild muster that is very popular in the United States and is commonly referred to as just "mustard" by most Americans. Yellow mustard has a smooth texture.
- Dijon mustard
- A French mustard that replaces some or all of the vinegar with white wine. Dijon mustard has a smooth texture.
- Spicy brown mustard
- A coarsely ground brown mustard that uses the brown mustard seeds in addition to the standard yellow and white seeds. Has a deeper flavor compared to other mustards.
- Wine mustards
- Similar to Dijon mustards, but uses a specific wines such as Pinot noir, champagne, or white burgundy instead of a generic white wine.
- Coarse mustards
- Whole grain mustards
- English mustard
- German mustard
- Chinese mustard
- Flavored mustards
