Ascorbic acid is a water soluble vitamin that is found in fresh fruits, berries, and vegetables.

Ascorbic acid, also called Vitamin C, is a water-soluble vitamin. The acid is found in fresh fruits, berries, and vegetables.

It is sometimes added to packaged food or drink as a preservative. It will not impact brewer's yeast and is fine to use juice containing this preservative for use in cider making.[1]
