A vegetable is a part of a plant, other than its fruit, that is eaten in large quantities as food. When used in small quantities it is refereed to as an herb or spice. Many vegetables come from plant stems, leaves, and roots, and can be harvested at various stages of a plant's life, such as shortly after germination with microgreens, or at the end of the plant's life.
