Canning is a food preservation method that places food into containers that can be stored at room temperature. Industrial canning methods use disposable metal containers while home canning methods use reusable mason jars.
Canning can be achieved using through a water bath method or through pressure canning. The water bath method preserves texture but can only can food with a high amount of acid, like tomatoes, pickles, and jams. Pressure canning can alter the texture of the food but can be employed to can foods that are low in acid, such as meat, potatoes, and green beans.
