Xanthan gum

Xanthan gum is a powdery polysaccharide used in cooking to create a creamy texture, as an emulsifier, a thickener, and as a stabilizer. It is named for the bacteria, Xanthomonas campestris, which is fermented on sucrose. The resulting gel is then dried and milled to create the powder.

The substance can be used to imitate gluten.
