Fermentation occurs when growing microorganisms, such as yeast and bacteria using sugar for energy in an environment without oxygen. Fermented beverages include wine, beer, and cider. Fermented foods include sauerkraut, kimchi, kefir, kombucha, miso, tempeh, and yogurt.
