Ethylene

Ethylene (C2H4) at room temperature is a colorless flammable gas with a faint "sweet and musky" odor. It is a hydrocarbon and the simplest alkene compound. Most fruit produce ethylene to start the ripening process.[1]

Root cellars require adequate ventilation to remove the buildup of ethylene to prevent the stored produce from spoiling.
