Sunflower oil is a type of fat found in seeds of the sunflower plant.

Dietary fat is any lipid compounds found in food. Together with carbohydrates, protein, and alcohol, fat is a source of calories, with some specific types of fat compounds essential for proper nutrition.

Dietary fat can be categorized depending on the amount of double bonds in the compound. Saturated fat is a type of lipid made from fatty acids that has all carbons atoms linked together using only one bond, enabling them to hold onto the most amount of hydrogen. Saturated fats tend to be solid at room temperature. Unsaturated fat compounds have fatty acids with one or more double bonded carbon molecules, with monounsaturated fat having one and polyunsaturated fat having two or more. Unsaturated fats tend to be liquid at room temperature. The two hydrogen molecules attached to the two double bonded carbon molecules can either be on the same side in a cis-configuration, or one on both sides in a trans-configuration, the latter of which is called trans fat.[1]

A diet that is high in dietary fat and low in carbohydrates is the keto diet.
