Sodium metabisulfite (Na2S2O5) is a compound that is a white power and has a light odor of rotten eggs. It is used as a disinfectant, antioxidant, and food preservative.

Disinfectant

It is commonly used in homebrewing and winemaking to sanitize equipment.

To use:[1]

  1. All equipment should be cleaned with soapy water first
  2. Dissolve 1 teaspoon of sodium metabisulfite per each gallon of water
  3. Also add 1/2 teaspoon of citric acid
  4. Sanitize fermentation vessels by putting in 2 to 3 inches of solution in the bottom of the vessel
  5. Seal the vessel air-tight for 20 minutes to allow the fumes from the solution to permeate the inside walls
  6. You can also put in the vessel other equipment such as hoses, hydrometer, air-locks, rubber stoppers to be sanitized at the same time
